This colourful cake is just so much fun I had to share it! Bright and cheery, it would look amazing done in pinks and purples for a little girl or blues and greens for a little boy. The best part of it though, it's filled and covered with one of my favourite frostings...swiss meringue buttercream. If you've never tried swiss meringue buttercream, it's heavenly. Silky smooth, half the sweetness of regular buttercream and fluffy like whipped cream. Delicious!
